Proshut-Wrapped Tuna Rice Balls

These delish, toasty rice balls have hidden gem (a.k.a. aioli-drenched tuna salad) and are wrapped in silky prosciutto. Mmmmm…. crème fraîche.

It only takes about 20 mins to make these for 2 foodies (if you microwave the rice instead of traditional cooking) including time to make the aioli.

Ingredients:

1/2 cup of Aioli (garlicky mayo)

1 Small canned tuna (5oz, salted)

2 Spring onions (or green onions) – chopped

5-6 slices of Prosciutto

2 Cups Cooked brown rice (or can be white, black pearl etc.) – must be STICKY!

[Note: I used Trader Joe’s Microwavable Brown Rice (1 pouch) for this recipe. I found it delish/reliable/and fast! Though I’m azn myself, cooking brown rice can be a pain in the butt. If you are blessed and happen to live near a Korean market (ex. Hannam Chain), I also recommend Hatban Microwavable Rice, too. Hands down the best microwavable rice in the world.]

Some sesame seeds

1 Spoon of sesame oil

Some salt and ground black pepper to taste

…and a Ziploc bag or plastic food wrap

  1. First off, put one pouch of the TJ’s brown rice in the microwave and heat it for 3 mins. While we’re doing the rest of the cooking, it will cool down nicely (so you can actually make the rice balls without getting your hands burn!)

[Alt: 2 packs of round-shaped microwavable rice (like this) or 2 cups of boiled rice]

2. While rice is heating up, make some aioli real quick (chop-chop recipe).

3. Chop the spring onions.

4. Then mix the chopped spring onions and canned tuna together, while slowly pouring aioli into the mix until it has good balance (You prob won’t need the entire aioli sauce).

[Note: I used canned tuna w/ added salt, so did not need any extra salt to taste. If you choose to use one w/ no added salt, you might need a tiny bit of salt & pepper to taste.]

5. Put heated rice into a bowl and mix it with a small spoon of sesame oil and a few sprinkles of sesame seeds. (Again, add a tiny bit of salt & pepper to taste if you want)

6. Now wear a Ziploc bag on one hand and place some rice mix on your palm.

[Alt: you can use plastic food wrap instead.]

7. Flatten the rice mix on your hand and put the tuna salad filling (about 1 tbsp) on top.

8. Wrap the filling with the rice mix

[Note: use spoon to help shape rice balls]

9. Wrap the rice ball with a slice of prosciutto!

10. Now take off the Ziploc bag from your hand as you put the riceball inside the bag.

11. Press/squeeze it lightly while keeping it right round, right round… (this will keep the rice ball from falling apart all over you)

And voila! rice balls melting in your mouth… *crème fraîche*

You can make 5-6 rice balls with this recipe. Just another friendly note, though, if you make 5 and have to share with another person, There Will Be War…
